Nopales con (not) Huevos

I have always loved Nopales con Huevos. It is a dish that reminds me of my childhood. Simple, flavorful, filling.

What follows is my attempt to transform it into a plant-based dish.

I cook for just my wife and I so you may need to multiply the recipe. But don’t over think it. You just need enough marinade to cover the tofu. We use 1 (14 oz) package of non-GMO, organic extra-firm tofu for the 2 of us.

I use a 2 lb package of raw cactus. You can start with the paddles, but I have a market near me that sells them peeled, de-thorned and sliced. Boil them for 20 mins in a pan until the gelatin sweats out of them. Rinse well to remove the gelatinous liquid. You may need to rinse several times before you have gotten it all.

For the not eggs I prepared some tofu using a marinade; crumbling it up to look like scrambled eggs. The turmeric gives the color of egg yolks (a common trick).

1/2 cup Water

1 tsp Habanero hot sauce

1 tsp Liquid Aminos

1/2 tsp Nutritional Yeast

1/2 tsp Tumeric

1/2 tsp Curry Powder

 

Drain and press the tofu. Crumble it into the marinade to approximate the texture of scrambled eggs. Let it marinade for at least an hour.

Then sauté an onion and some garlic (3-4 cloves). Add the nopales and 1 tbsp each cumin, Mexican chile powder and cayenne pepper. We like it hot. If your taste is not the same skip the cayenne.

Carefully spoon the tofu mixture with a slotted spoon (leave the liquid behind) onto the top of the nopales. Let it warm up on the top – resist the urge to stir it. I use a flat wooden spatula to scrape under the product in the pan once every few mins just to prevent it from sticking.

I also had some leftover tofu that I had smoked on the BBQ the previous weekend. So I crumbled them in as well.

The less you stir the tofu the more it will stay together. I would combine it about half to 3/4 of the way through the cooking time and then just let it be.

Get some pinto beans ready (soak the night before and cook slowly with onion and spices to taste) by heating in a pan and mash about 1/3 of the beans to simulate refried beans. Of course, the beans should contain lots of cumin.

Serve the Nopales con (not) Huevos and beans with some homemade 100{1f9f7c237d916e15883921714774bc0009153ce8b53e25cd8c6ab03ed5ee4d46} Whole Wheat oil-free tortillas. A few chiles (Serranos or Jalapeños) on the side are always good too.
